How to Make Beer Cheese Dip for Pretzels

Ingredients
  

  • 2 Tbsp. Butter
  • 2 Tbsp. Flour
  • 1/2 cup Whole milk
  • 1/2 cup Beer
  • 8 oz  Sharp cheddar cheese shredded
  • 2 oz Cream cheese
  • 2 tsp. Dijon mustard
  • 1/2 tsp. Smoked paprika
  • Salt and black pepper to taste
  • Scallions thinly sliced

Instructions
 

  • Melt butter in a medium saucepan over medium heat.
  • Add flour and cook, stirring constantly, for 1-2 minutes, just until the raw flour taste cooks out. It will turn into a thick paste. 
  • Slowly pour in the milk, stirring constantly. 
  • Continue cooking until the mixture thickens, 1-2 minutes. 
  • Stir in the beer, Dijon, and smoked paprika. 
  • Continue cooking for another minute.
  • Stir in the cream cheese and sharp cheddar cheese. 
  • Continue cooking and stirring constantly until the cheese has melted.   
  • Taste and adjust the seasoning with salt and pepper, if needed. 
  • Transfer to a serving dish and top with fresh scallions.  
  • Serve warm beer cheese dip with pretzels, crusty bread, or your favorite dippers.
