Why is it Called Neiman Marcus Dip
Neiman Marcus Dip has a very interesting history! According to the internets, the dip was developed in the 1950s by Helen Corbitt, Neiman Marcus’s Director of Food Services.
Helen was a culinary genius for her time, writing many cookbooks and creating recipes that are still widely made today, including this dip and Texas Caviar. {You can find some of her classic cookbooks on Amazon}
The dip was on the menu at The Zodiac Room at Neiman Marcus flagship store in Dallas, Texas, and was originally called “Almond Bacon Cheese Spread”.
Today, we refer to Corbitt’s Almond Bacon Cheese Spread as Neiman Marcus Dip because of its history with the store…the new name is also more memorable!
Fun fact: The Zodiac Room is still open at the flagship Neiman Marcus store in Dallas. The dip is no longer on the menu (but we have the recipe here for you to easily make at home!).

Ingredients
- Shredded Cheese – We use shredded cheddar cheese from a bag, feel free to use mild, medium, sharp or extra sharp depending on your preference.
- Bacon – This is one recipe where you can use real cooked bacon pieces, not to be confused with Bacon Bits, instead of cooked and crumbled bacon slices.
- Mayonaise – Full-fat mayo brand of choice. Do not substitute Miracle Whip.
- Slivered Almonds – Try not to skip the almonds as they add a nice crunch and flavor. We have seen recipes without, however, the original dip included slivered almonds.
- Green Onion
How to Make Neiman Marcus Dip
1. Add cheddar cheese, bacon, almonds, green onions, and mayo in a large mixing bowl.
2. Mix until thoroughly combined.
3. Cover with plastic wrap and chill in the refrigerator for at least 2 hours.
4. Serve with crackers or your favorite dippers.

How to Store Neiman Marcus Dip
Store leftover dip in a covered container in the fridge for up to two days. Mix well before re-serving.
Can Neiman Marcus Dip be Made the Night Before
Yes! This is one dip recipe that can be made the night before serving. In fact, this cold dip tastes better when it has been refrigerated for at least two hours before serving.
If you want to leave the dip in the mixing bowl after prep, be sure to cover it with plastic wrap to keep moisture in. Stir the dip well before serving if making it the night before.
Tips for Making Neiman Marcus Dip
- If using mayo that has been stored in the refrigerator, you may serve the dip immediately. This dip should be served cold and left out no more than 2 hours due to the mayo.
- This dip is best when the ingredients have a few hours to meld together in the refrigerator.
- Store in the fridge for up to 2 days.

Ingredients
- 8 oz shredded cheddar cheese
- 1/2 cup cooked bacon pieces
- 1 1/2 cups mayonnaise
- 1/2 cup slivered almonds
- 5 green onions chopped
